the perfect frappe
If you’ve ever made a Frappuccino at home, you know it’s a little bit trickier than it sounds. You’re expecting a creamy, fluffy cup of Starbucks heaven, but you end up with a watery, clumpy coffee slush. More than likely, it’s either too watery or too thick.
While the taste of a homeade frappuccino may be right on point, you want it to look pretty, too. We can help you out with that, too! Experiment with different syrups, temperatures and ice, or skip all of that and add a pinch of xanthan gum.
Xanthan gum is a safe additive commonly used in foods and drinks. It’s an effective thickening agent, emulsifier and stabilizer that prevents ingredients from separating. Adding just a pinch (a teeny tiny pinch) will give your homemade frappuccino the creamy texture you know and love.
We tend to experiment quite a bit here in the SLL kitchen and pulled ours from the Modernist Pantry kit we snagged from Amazon. Xanthan gum is relatively cheap and can be found at most stores, including Walmart and online retailers.

Ingredients
- 2 TSP Waka instant dark chocolate flavored coffee
- 3 TSP Klass horchata drink mix
- 1/4 cup hot water
- 1 cup cold milk
- 1 cup of ice
Instructions
In a small cup, dissolve 1 TSP Waka instant coffee in 1/4 cup hot water
Add ice, milk, and horchata to blender.
Pour instant coffee mixture into blender.
Blend 30-60 seconds or until desired consistency. Add ice to thicken or cold water to thin.
Top with sugar free whipped cream and Tajin.
